@alexdainis breaks down this optical science. As water fills the glass, light from the coin bends while passing through multiple materials, redirecting what you see so the coin is hidden from view. The coaster blocks where that light ends up, making it seem like the coin has vanished. Change the setup slightly by adding water on top of the coin first, and the illusion no longer works.
