this only works if you sous vide the steak to 59c and cryfreeze the steak in liquid nitro, than fry it in oil🤦♂️ you messed up and its not cooked evenly, i bet the center of the steak is cold 🤦♂️

59 is decidedly medium. You do you, but that's too much for me. With sous vide the size doesn't matter, you'll have the same temperature throughout given enough time. And even a bit tougher cuts are fine medium-rare if you just increase the time in the bath a bit.
I did a flank steak the other day, six hours at 54 C and it was soo good, better than sirloin or filet.
